Sable was born in a farming family in Mandwa in Beed district. From the age of 6, he ran or walked a distance of 6 km (3.7 mi) between home and school because of the lack of transport facilities in his village. After completing 12th standard, he joined the 5 Mahar Regiment of the Indian Army, posted at Siachen Glacier in 2013-2014, later transferred to the deserts of North-West Rajasthan and Sikkim in 2015. He participated in inter-army cross country for the first time in 2015 at the insistence of his colleagues, before moving to steeplechase under the leadership of trainer Amrish Kumar. Sable, who was overweight, managed to lose 20 kg (44 lb) in three months, before joining the national camp, where he was coached by Nikolai Snesarev. In 2018, Sable went back to coach Kumar because Nnesarev's training routine did not "relax" him.
During this, he focused on improving his timing and stamina. He then graduated from Pune University and currently, he is serving as a Junior Commissioned Officer in the Indian Army. In 2018, due to an ankle injury, he was ruled out of the Asian Games. After recovering from injury, he participated in the Open National Athletics Championships held in Bhubaneswar. Sable clocked 8:29.80 at the 2018 National Open Championships in Bhubaneswar, breaking the 37-year-old national record of 8:30.88 held by Gopal Saini at the 1981 Asian Championships in Tokyo. He set a new national record of 8:28.94 in the Federation Cup in Patiala in March 2019, as a result of which he qualified for the 2019 Asian Athletics Championships and the 2019 World Athletics Championships. He became the first male steeplechaser from India after Dina Ram (1991) to qualify for the World Championships.
Sable won the silver medal in the 3000m steeplechase at the 2019 Asian Athletics Championships in Doha, his first international event, with a time of 8:30.19. On 1 October 2019, he again broke his own national record at the World Championships, where he ran 8:25.23 in heats, in heat and out, despite Takele Nighett's accidental tripping end twice during the race. Ranked seventh. However, he was included in the final of the 3000m steeplechase when the Athletics Federation of India successfully appealed for his inclusion in the final and hence, became the first Indian to qualify for the 3000m steeplechase final at the World Athletics Championships 2019 . He improved the national record to 8:21.37 in the final, finished 13th out of 16 runners, and qualified for the 2020 Summer Olympics. He then secured his spot at the 2021 Tokyo Olympics after achieving the benchmark to qualify for the event. In 2020, Avinash Sable broke the Indian Half Marathon in the Airtel Delhi Marathon by clocking 1:00.30 seconds and became the first and only Indian to complete the half marathon in under 61 minutes. He finished 10th in the event.
